Almost 60% of Slovenia is covered by coniferous and deciduous forests. In the forest pasture, bees collect honeydew from various tree species and plants of the forest understorey. Since honeydew or forest honey is a mixture of different types of honeydew, samples can vary greatly in terms of colour, scent, taste, and aroma. It ranges from light to dark brown, with a hint of red or green. It contains a significant amount of minerals. Spruce honey and silver fir honey are also classified as honeydew or forest honey.
